Look at how the wiring is done, whether there are testing benches and whether drawings are prepared before building. A neat shop floor usually leads to neat panels, and a messy one rarely does.
Next, ask what brands of components they use and whether they will put them in writing in the quotation. Two quotes that look far apart in price often differ in exactly this, the make of the breaker or the thickness of the sheet. A quote that hides these details is a quote worth questioning.
